The warm, inviting flavor of gingerbread is a potent combination of tongue-tingling spices that will warm your mouth and as they soothe your soul: the fiery zing of ginger is complemented by the powerhouse pair of cinnamon and cloves, delicately scented with nutmeg, and overlaid with the soft caramel sweetness of coconut sugar – considered to be the most sustainable sweetener on the planet (a fact that has our resident Sugar Plum Fairy bursting with pride and dancing with delight).

SPICE
Ginger has a long tradition of being a strong digestive aid, source of antioxidants, and anti-inflammation herb. Gingerols are potent anti-inflammatory compounds which, when consumed regularly, have shown to alleviate symptoms of arthritis. Ginger warms the body and therefore helps raise body temperature, warding off sickness. Chocolate Girl recommends taking ginger (a shot of juice or strong tea made from fresh root) at the first sign of “flu/cold/sore throat” or upset tummy.

Cinnamon is rich in manganese, fiber, iron, and calcium. Research has found that just 1/2 teaspoon of cinnamon per day may lower LDL cholesterol, and that cinnamon may have a regulatory effect on blood sugar (important for folks with type 2 diabetes). Researchers at Copenhagen University found significant reduction in arthritis pain when subjects took cinnamon powder and honey before breakfast. It has been found to reduce food spoilage by inhibiting bacterial growth, and one study found an increase in cognition and memory when cinnamon is smelled.
